Stuffed Baked Potato with BBQ Pork, Stewed Okra and Tomatoes, & Cole Slaw

Even Mr. Potato Head thinks these Pulled Pork loaded baked potatoes are out of this world. They are hearty and stuffed with pork, cheese, and all the delicious toppings.  Stewed okra and tomatoes are a healthy and delicious southern side. Cooked with onion, celery, and a few seasonings, this is a delicious vegetable side dish. There's so much to love when it comes to this coleslaw- it’s tart, sweet, creamy, and crunchy.

Lasagna, Caesar Salad, & Garlic Bread

This hearty dinner has layers of deliciousness with pasta, tomato sauce, ricotta cheese, Italian seasonings, sauteed ground beef, and loads of mozzarella cheese. The freshly made Caesar salad and garlic bread complete this meal. Be sure to enjoy this dinner and “Pasta La vista, Baby!”

Wicked Chicken Burger, Roasted Potatoes, & Ambrosia

This lean wicked chicken burger is made with ground chicken breast, bacon, and a “wickedly tasty” sauce served on a homemade freshly baked roll.  It comes with fresh roasted potatoes and Ambrosia Salad.The name ambrosia derives from Greek mythology, meaning immortality; also known as food of the gods, Greek gods commonly ate ambrosia to prevent becoming weak. In present day, we've come to know it as a deliciously, fluffy fruit salad (or dessert) with tropical flavors.

Jambalaya, Salad, & Cornbread

Jambalaya is a hallmark of the Creole cuisine. It is a dish that combines cooked rice with a variety of ingredients that includes tomatoes, onion, green peppers, Cajun seasonings, smoked sausage, chicken thighs, and shrimp. Jambalaya is similar to Spanish paella which was brought to the area by Spanish explorers. Saffron, which is the main spice used in paella, may have been difficult to find in the new world and may have been replaced with tomatoes to create what we now know as Creole Jambalaya. Delicious cornbread and a healthy salad accompany this meal.

Lemon Chicken, Collard Greens, & Cheesy Cornbread

Lemony, bright, and rich describe this dish. Garlic and lemon butter sauce enhance the chicken and add so much flavor! The collard greens have a nice sweet, salty, sour balance with bacon that lends a nice smoky flavor. The Cheesy Corn Cornbread is crispy on the outside and super moist on the inside.

Sloppy Joe Casserole, Garden Salad, & Waldorf

This schoolhouse classic has been turned up a notch with a sweet-savory blend of sauce and ground beef that is sure to have everyone asking for seconds. There are a few differences from the typical sandwich—namely, you'll be losing the buns, and  will need to pick up a fork to dig in. It comes with a fresh garden salad and the all-American Waldorf Salad that first gained popularity in the 19th century at the Waldorf Astoria Hotel.

Cowboy Casserole, Mexican Corn, & Fresh Fruit

Layered with all of the good stuff cowboys (and cowgirls) love, this beef casserole is a dinner that is sure to satisfy everyone. Ground beef, black beans, cheddar cheese, corn, and onion are topped with a delicious cornbread topping. The Mexican Street Corn features a tangy sauce and crumbly cotija cheese sprinkled with just the right amount of spice. Fresh fruit accompanies this meal.
