Jambalaya is a hallmark of the Creole cuisine. Jambalaya is similar to Spanish paella which was brought to the area by Spanish explorers. Saffron, which is the main spice used in paella, may have been difficult to find in the new world and may have been replaced with tomatoes to create what we now know as Creole Jambalaya. It’s not clear where the expression “stuffed like a manicotti” originated, but it’s safe to say that no one leaves hungry after sitting down to a meal of stuffed pasta. Manicotti, meaning “little muffs” in Italian, are tubes of pasta usually about four inches long and one inch in diameter.
