Stewed Okra


Jambalaya is a hallmark of the Creole cuisine. It is a dish that combines cooked rice with a variety of ingredients that includes tomatoes, onion, green peppers, Cajun seasonings, smoked sausage, chicken, and shrimp. Jambalaya is similar to Spanish paella which was brought to the area by Spanish explorers. Saffron, which is the main spice used in paella, may have been difficult to find in the new world and may have been replaced with tomatoes to create what we now know as Creole Jambalaya. Delicious cornbread and stewed okra accompany this meal.

What is an Italian surfer's favorite pasta?

Manicotti… It's totally tubular.

It’s not clear where the expression “stuffed like a manicotti” originated, but it’s safe to say that no one leaves hungry after sitting down to a meal of stuffed pasta. Manicotti, meaning “little muffs” in Italian, are tubes of pasta usually about four inches long and one inch in diameter. The pasta is boiled until nearly al dente, stuffed, baked, and topped with sauce. It’s jam packed with a rich cheese filling and brimming with delicious Italian flavor and it’s oh so satisfying. It comes with a freshly made Italian salad and garlic bread.
