Rosemary Pork Loin with Goat Cheese and Balsamic Vinaigrette Drizzle, Scalloped Corn, and Tomato Herb Panzanella

What's the greatest cheese of all time?

                                                       G.O.A.T.  Cheese

I officially nominate this herbed goat cheese stuffed pork loin as the main dish for your Monday dinner! This pork loin is rubbed with fresh herbs and stuffed with goat cheese. You'll savor the sweet-yet-tart bite you get from the balsamic vinegar drizzle. The oven bubbling and golden creamy scalloped corn is pure comfort food.  The combination of cream cheese, corn, and more melted cheese makes this dish special, especially with its buttery, crunchy topping.  Tomatoes, herbs, and toasted bread come together to make a vibrant side in this bright dish made for the warm weather. Think of this panzanella as a salad where the toasty, golden-brown croutons are the star of the show. After all, aren't the croutons always the best part? Peppery baby arugula lightens up this salad, dressed simply with vinegar, mustard, olive oil, and garlic.

Million Dollar Spaghetti, Italian Salad, and Garlic Toast

You’ll feel like a million bucks after eating this spaghetti casserole with layers of noodles, cheese, meat, and sauce. It's then topped with more cheese and baked to golden perfection! It comes with a fresh Italian Salad and garlic toast.

This is “pastably” the best thing you’ll eat all week!

Green Chili Chicken Enchiladas, Black Beans and Rice, & Marinated Tomato and Herb Salad

If you have 12 enchiladas....                    Is it a foot-alada?

These Mexican green chili enchiladas have a tasty green sauce, corn tortillas, tender seasoned chicken, and lots of melted cheese. This earthy and delicious dish is rich, creamy, cheesy, and saucy. These green chili chicken enchiladas are comfort to the soul and a flavor explosion to the tastebuds. They are accompanied by black beans and rice and a tomato salad.  The tomatoes are marinated which allows them to release their juices, absorb the favors, and break down to become more tender. Once marinated, let these tangy tomatoes steal the show in a simple summer salad that's topped with sea salt, and fresh herbs.

                                             Chili today, hot tamale!

This homey, comforting casserole contains ground beef and onions together with other ingredients and seasonings, such as black beans, tomatoes, and chili sauce. It is topped with melty cheese and a fluffy, cornbread-like masa topping. Wicked Chicken Burger Sliders, Homemade Baked Beans, & Spicy Pineapple Slaw

This lean burger is made with ground chicken breasts bacon, and a “wickedly tasty” sauce served on a homemade freshly baked roll. The homemade beans include onion and bacon (because we are firm believers that most things taste  better with bacon) and a sweet and spicy sauce made of brown sugar, mustard, and other special seasonings. Spicy jalapenos and sweet pineapple are a match made in “side dish heaven” with this crunchy, festive, and colorful slaw that’s topped with lime juice and honey.
